This is one of my favorite side dishes and best of all it is healthy (ha). It goes great with a venison roast or any piece of red meat cooked medium rare.
2-3 slices of bacon per person
1 medium potato per person (more if you are hungry)
1 medium vidalia onion per 4 people
In a large heavy skillet cook bacon the same way you like if for breakfast. Remove the bacon and allow it to cool and pour the grease into a coffee cup for later use. Dice potatoes (1/2″ pieces) and onion. Add a few tablespoons of bacon grease (use as much as needed) back to the pan and stir-fry potatoes and onions until potatoes are browned and almost done. Crumble bacon and add to the potatoes and onion. Remove from heat, cover, and let stand for about 5 minutes to allow the residual heat and moisture to finish cooking the potatoes. If you have some Montreal steak seasoning feel free to throw some in (you can substitute a little garlic and pepper) but be careful if you add salt (remember this is a healthy dish).
